Can I use blueberry honey instead of syrup?

Yes. Blueberry Infused Raw Honey is a good substitute for syrup on pancakes, waffles or French toast and for jelly on toast or bagels. It also makes a simple topping for a pastry when you want sweet fruit flavor without a separate jam. The base is raw wildflower honey, so if it thickens, set the bottle in a bowl of warm water until it pours again. The 1 lb bottle lasts through plenty of breakfasts.

Why did my honey turn thick or grainy?

That is crystallization, and it is natural for raw honey. Set the blueberry honey bottle in a bowl of warm water and stir until it pours smoothly again. Avoid the microwave, which can overheat it. Store the bottle at room temperature with the lid sealed; honey does not need the refrigerator.
